Why Aren’t More People Talking About Fennel?

While researching recent articles—like this one on bloat-reducing foods and this one on anti-cellulite recipes—we noticed one ingredient in particular seems to be the star of all things good for you these days: fennel. According to the New York Times, fennel is a “low-calorie source of vitamin C, dietary fiber, potassium and folate. Fennel also contains phytonutrients that may have antioxidant properties.” Additionally, this veggie is high in bone-fortifying calcium. Since fennel season starts in September and continues into the spring, we figure now is as good a time as any to get into it. Here, eight fennel-focused recipes to test out this fall and beyond.
