Avocado toast will always have a place in our hearts, but lately we’ve been piling our breakfast plates with a different kind of toast. Namely, sweet potato toast. It’s just as delicious as avocado toast (dare we say more delicious?), and oh-so-versatile. The concept is simple: Instead of using bread as a base for avocado/eggs/almond butter/accouterments of your choice, use thin slices of sweet potatoes that have been toasted (yes, you can put them right in the toaster) or baked.
